Using this to cycle through my newly-expired canned fruits
INGREDIENTS
- 1 can fruit (I used sweet dark cherries), drained (and rinsed, if desired)
- 1.5c AP flour
- .5c almond flour
- 2t baking powder
- .5t sea salt
- .5c sugar (next time I’ll reduce to 1/3c)
- .5c butter (at room temp)
- 3 large eggs
- .5c buttermilk (or milk+lemon juice for the DIY version)
- 1t vanilla extract
INSTRUCTIONS
Preheat oven to 350*
Line loaf pan with parchment paper, spray lightly with oil
In medium bowl, combine flour, salt, and baking powder; set aside.
In mixing bowl, cream sugar and butter. Once light and fluffy, add eggs one at a time. When well mixed, add buttermilk and vanilla.
Add in flour mix, one third at a time. Stir until just mixed in.
Fold in fruit. Add batter to prepared pan.
Bake for 1 hour, or until an inserted toothpick comes out clean.
Cool on wire rack.
This is a simple, honest loaf cake. Nothing fancy, and a good way to cycle through canned goods. Will likely be making many variations of this in the future, hence the plans to reduce the sugar amount as low as I can get away with.
Made this on a day that T was having friends over to game, and all the guys enjoyed it.
